    The fish used to make fish tapa is usually filefish, also known as saguksok or subagyo. This fish is sweet and salty, making it a healthier alternative to tapas made from pork. The fish is marinated in a traditional method that dates back to Spanish colonial times, and then air-dried using low salinity. The fish is then vacuum-sealed in biodegradable bags to extend its storage life and flavor.
